is there a way to prevent staff from seeing each other task list except for the admin or anyone who the admin has has given permission to see other tasks

There is not a way to restrict that. Pretty much if the employee is given access to the tasks section, they can see everybody's tasks. I'll move your thread to the request section! Erica
